How to cook Soto Ayam

Ready to cook? Follow these simple instructions:

  1. Rinse the chicken thighs under cool water and pat them dry with paper towels.
  2. Roughly chop the onion, garlic, ginger, and lemongrass stalks, and set aside.
  3. Heat a large pot over medium-high heat and add in the chicken pieces, skin side down. Cook for 4-5 minutes on each side, until crisp and browned. Remove from the pot and set aside.
  4. In the same pot, add the chopped onion, garlic, ginger, and lemongrass, and cook for 2-3 minutes until fragrant.
  5. Add in the galangal, kaffir lime leaves, cilantro, cumin, coriander, and turmeric, and cook for another 2-3 minutes until aromatic.
  6. Pour in the chicken broth and bring to a boil. Reduce the heat to low, add in the cooked chicken pieces, and simmer for 30-40 minutes until the chicken is cooked through and tender.
  7. Turn off the heat and let the soup cool slightly. Remove the chicken pieces from the pot, shred the meat into bite-sized pieces, and discard the bones and skin.
  8. Season the soup with salt and pepper to taste.
  9. To serve, ladle the soup into bowls and top with the shredded chicken and crispy shallots. Garnish with fresh herbs and lime wedges, and enjoy!
