Hey guys, I’ve been experimenting with some new recipes in the kitchen and I have to say, I just tried an absolutely amazing dish. It’s called Ayam Masak Merah, which translates to Spicy Red Chicken, and it’s a traditional Malaysian meal. I found the recipe from a website called Life is Great, but I made a few modifications to make it my own.

Step 1: Ingredients

The first thing you’ll need to do is gather up all the ingredients. Here’s what you’ll need:

  • 1 whole chicken, cut into pieces
  • 6 cloves of garlic
  • 2 large onions, chopped
  • 1 can of tomato sauce
  • 1 small can of tomato paste
  • 2 tablespoons of sugar
  • 2 tablespoons of chili powder
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • A handful of fresh cilantro

Step 2: Marinating the chicken

Once you have all your ingredients, it’s time to marinate the chicken. Start by seasoning the chicken with salt and pepper, then mix together the chili powder and sugar in a bowl. Rub the chili powder and sugar mixture all over the chicken, making sure to coat it evenly. Let the chicken marinate for at least an hour, but preferably overnight.

Step 3: Cooking the chicken

When you’re ready to cook, heat up some oil in a large wok or pan. Add the chopped onions and garlic, and sauté until the onions are translucent. Then, add the chicken pieces and cook until they’re browned on all sides.

Step 4: Adding the sauce

Once the chicken is browned, add the can of tomato sauce and the small can of tomato paste. Mix everything together so the chicken is coated in the sauce. Let it simmer for about 20 minutes, or until the chicken is fully cooked and tender. If you want it to be spicier, you can add more chili powder to taste.

Step 5: Garnish with cilantro

Once the chicken is fully cooked and the sauce has thickened up, turn off the heat and garnish with a handful of fresh cilantro.
