  • 10 red chili peppers
  • 10 shallots
  • 5 cloves of garlic
  • 2 tomatoes
  • 2 tablespoons of vegetable oil
  • 1 tablespoon of sugar
  • 1 teaspoon of salt
  • 1 tablespoon of lime juice


  1. Chop the chili peppers, shallots, garlic, and tomatoes into small pieces.
  2. Heat the vegetable oil in a pan over medium heat.
  3. Add the chopped ingredients to the pan and sauté until fragrant.
  4. Add the sugar and salt to the pan and stir until the sugar has dissolved.
  5. Remove the pan from heat and let it cool for a couple of minutes.
  6. Transfer the contents of the pan to a blender and blend until smooth.
  7. Add the lime juice to the blender and give it one final blend.
  8. Transfer the sambal to a bowl and serve with Ayam Bakar.

Tips and Tricks

  • Use gloves when handling chili peppers to avoid getting burned.
  • If you prefer a milder sambal, remove the seeds from the chili peppers before chopping them.
  • You can adjust the amount of sugar and salt to your liking.
  • Add a tablespoon of shrimp paste for an extra umami flavor.
