Hey y’all, I wanted to share with y’all one of my favorite recipes: Sambal Goreng Ati Ampela! It’s super easy and delicious, perfect for those days when I’m feeling lazy but still want to eat something tasty.

Sambal Goreng Ati Ampela

Ingredients:

  • 500gr chicken liver and gizzard (ati-ampela), cut into bite-sized pieces
  • 1 stalk lemongrass, bruised
  • 4 kaffir lime leaves
  • 2 Indonesian bay leaves
  • 2 tbsp oil
  • 400ml coconut milk
  • 1 tbsp tamarind paste, dissolved in 50ml water
  • salt and sugar to taste

Spice Paste:

  • 10 red chilies
  • 5 bird’s eye chilies
  • 5 shallots
  • 4 garlic cloves
  • 1 inch ginger
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder

Instructions:

  1. Grind all the spice paste ingredients in a food processor or mortar and pestle into a smooth paste.
  2. Heat oil in a wok over medium heat. Add the spice paste, lemongrass, kaffir lime leaves, and bay leaves. Stir and cook until fragrant, about 3 minutes.
  3. Add the chicken liver and gizzard, and stir to combine. Cook for 2-3 minutes or until the chicken is no longer pink.
  4. Add coconut milk and tamarind paste mixture. Stir, and let it simmer for 15-20 minutes or until the sauce thickens.
  5. Season with salt and sugar to taste.
  6. Remove from heat, serve and enjoy!

That’s it y’all! This recipe is so simple and easy to follow. If you don’t like spicy food, you can always adjust the amount of chilies to your liking. And if you don’t like chicken liver and gizzard, you can always use chicken or beef pieces instead.
